Kefir originated in the Caucasus, and the origins of kefir predate written records. Milk kefir is a fermented probiotic drink that is renowned for its healthful properties. Studies have shown that milk kefir is correlated with a wide range of health benefits, including improved digestion, lower blood pressure and cholesterol, cancer prevention , improved immune systems and reduced asthma and allergies. Milk kefir is a thick and slightly effervescent drink, with a sour, creamy taste.
The people of the Northern Caucasus region are renowned for their longevity, with one of the highest proportions of centenarians in the world. Milk kefir is a dietary staple in this region.
Traditionally, milk kefir was made by combining fresh milk and kefir starter culture inside goatskin bags. During the daytime, the goatskin bags were hung in the sunshine of the doorways, and prodded or pushed by each person who went through the doorway. As the milk kefir was consumed, more fresh milk was added to the goatskin bag, forming a continuous fermentation cycle.
Our kefir
The Kefir we bring to you has its origins from the Caucasus near the Caspian Sea. A family of ancestral dairy farmers, in the Rasht county area in northern Iran, shared this living culture with us. This bacteria starter culture has been fed and kept active for generations. It has been well looked after by us since the last 3 years and has adapted well to our weather and dairy with over hundreds of fermentation cycles already completed here in Mumbai.
What we are most particular about –We never let our starter culture touch any metal nor do we store it in any plastic containers. The microplastics easily and often diminish the potency of the Kefir. All our containers and vessels are cleaned extensively in order to ensure that no other foreign bacteria enters the fermentation process. We use full cream milk by specific vendors.
In the flavoured product we use very high-quality dates and organic cinnamon that has been specially sourced from Sri Lanka.
We put our Kefir through a double fermentation process of over 50 hours for each batch as we feel it increases the potency, the nutrients and protein contents.
The potency of our Kefir is best within the first 5 days from date of completion of the fermentation.
Our recommendations
Our recommendations – per 750 ml (approx) bottle of Kefir should last a single consumer 5 days. The Kefir bottle must always be refrigerated. Shake the bottle gently before consuming. Consumption may vary from person to person. This the bacteria supercharges your Gut bacteria so we suggest you do not have it on an empty stomach.
A small shot before or after meals would be most suitable.

Please make sure that the ingredients you add are natural and not processed. Do not put the Kefir through a blender or mixer. This will diminish most of the nutrients and loose its potency. Always gently stir with a wooden ladle.
